Will GTA 6 run at 60fps on PS5?
Coming from RDR2 at 30fps I really hope there is a performance mode. Any signs of one?

Not confirmed. Rockstar has not talked about performance modes yet. Every current generation Rockstar era open world has shipped with a quality mode and a performance mode though, so a 60fps option is a reasonable expectation rather than a promise.

Trailers are rendered for presentation, so do not read frame rate from them. Wait for the hands on previews closer to launch.
